Gluten-Free Peanut Butter Cookies

For those on a gluten-free diet, or just wanting a simple cookie to make with your kid

1 cup peanut butter
1 cup sugar
1 egg

Mix well and place on lightly greased cookies sheet. Cook for 10-12 minutes at 350 degrees.

Thats it. Gotta love simple cookie recipes

    What’s the best way to measure 1 cup of peanut butter? Eyeball it, or fill a measuring cup to ~1 cup and scoop it out?

    I fill up the ol measuring cup. Its rather messy, but I personally couldn’t eyeball it so its the only way for me.

    We used to use this recipe quite a bit before two of us developed our sugar allergy. We’ve had to get really creative with recipes since.
